After ice-skating meal

Chop onions, chives, gloves of garlic, spring onion, parsley, cherry tomatoes, potatoes, red peppers, celeriac, celery stalks and parsnips into an oven pan. Pour in some extra virgin olive oil and season with salt, pepper and bay leafs. On this bed of vegetables place a small fillet of beef (bring the meat to room temperature before roasting it!!!). Put the pan into a 200 degree Celsius oven for 30–40 minutes. Go ice skating (or some other suitable activity) with hubby and weans. On return move the fillet under a blanket to rest. Leave the veggies in for another 20 minutes or so. (continue activity).  After the rest,  slice the fillet and place on a plate with roasted veggies.

After ice-skating meal was liked by all.
