Ajvar, spinach-potatoes & chicken breasts

Place chicken breast onto an oven dish and drizzle over extra virgin olive oil. Chop in some herbs and garlic. Season with salt and pepper.  Roast in the oven until chicken is cooked through. 
Peel and fry cooked potatoes. Season with salt. Mix in some boiled spinach.
Prepare the portions using homemade Ajvar.
Blood organges are my favourite citrus fruit.
