Here is my take on Niçoise salad, which I tweaked with Quail eggs, cauliflower and fava beans. This rich salad will feed any hungry bird. =)
For the Salade Niçoise you need:
12 Quail eggs, decant into a bowl of iced water after boiling the eggs
A mugful of fava beans, boiled
Some French beans, boiled
4-5 ripe tomatoes, chopped
1/2 cucumber, sliced
1/2 yellow courgette, sliced
1 small cauliflower, boiled/steamed
A small red onion, thinly sliced
50 g small black olives, pitted
1 tbsp capers
8-15 fillets of anchovies
Parsley, finely chopped
For the dressing (use food processor or pestle & mortar):
1 clove of garlic
2 fillets of anchovies
Small handful of basil leaves
4 tbsp your favourite olive oil
1 tbsp red wine vinegar
Season with salt & black pepper

Home grown veggies do not look perfect, but they taste so much better than the veggies that you get from supermarkets. |
