Food cravings – Mussels with cinnamon- & chili-spiked soffritto


Recently I've had a strong craving for mussels.Could it be that my body is lacking of selenium, vitamin B12, zinc and folic acid or is it just because Danish mussels are delicious, affordable, easy to prepare, and above all, sustainable?


For my mussel recipe, you need to prepare a soffritto using garlic (3 gloves), carrot (1 pcs), onion (1 small red), celery (1 stalk), parsley, salt (1/3 ts), cinnamon (a pinch) and chili pepper (as much or as little you like). When the soffritto looks good, add 4 chopped ripe tomatoes and continue cooking for another 5 minutes. Now add a cup of white wine and bring to boil. Finally mix in the cleaned mussels (1 kg), cover with a lid and reduce the heat to medium. Stir a couple of times until the mussel shells have opened. Serve with bread.
