A Modest, Yet Elegant Fish Bake — Anciova a Catanisa

Anciova a Catanisa


Here's how you can prepare Anciova a Catanisa, a modest, yet elegant fish bake from Catania, Sicily.

You need:
Anchovies, vendace or any other small fish, 500 g
Extra-virgin olive oil, 3 tablespoons
Green olives pitted and chopped, 12 pcs (preferably Sicilian Aulivi Cunsati)
Pine kernels, 60 g
Bread crumbs, 3 tablespoons
Juice of a half lemon
Juice of an orange
Salt
Pepper

Fillet the anchovies and arrange them in an oven dish in two layers. After each layer sprinkle on top some fine kernels, shopped olives, lemon juice, orange juice and extra-virgin olive oil.
Anciova a Catanisa

Finally sprinkle some bread crums and extra-virgin olive oil on top. Season with salt and pepper. Bake in a 200 degree oven for 20-25 minutes basting the top at least once with cooking liquids.
