It is considered that this Catanese pasta dish is an homage to Norma, the most beautiful opera of Vincenzo Bellini. Apparently, Nino Martoglio, a famous theatre professional from Catania, exclaimed in front of this dish "È una Norma!!!" to indicate the goodness of the dish by implicitly comparing it to the supreme work of Bellini. In my opinion, Pasta alla Norma is the queen of all pasta dishes.
Give sliced aubergines a salt treatment and fry them in olive oil. Prepare a tomato sauce in a simple garlic-basil -soffritto. Boil pasta. Mix the fried aubergines, tomato sauce and salted Ricotta cheese together with al dente spaghetti. Decorate the serving bowl with fresh basil leaves and some ricotta.
