Tonight I prepared one of my favourite mayo-based salads, which I learned to prepare in Rhode Island in 1990. Tempus fugit! Chopped chicken meat, celery stalks and onion are combined here with some mayonnaise, pepper, salt and lemon juice. This simple salad works just as well without the onion – it's your call – and it is perfect for a picnic, lunch box, or dinner. Serve on bread or in endive spears with halved grapes or chopped apples.
