Here is how to make #celeriacfritters, which even children like to sample! Wash, but do not peal, a whole celeriac (lots of sand in the head!). Place it in a small oven dish and sprinkle over s&p, herbs of your choice, and 5 chopped garlic gloves. Now, pour over generously EVOO. Cover with a lid or tinfoil, and leave it in the oven for several hours (+150 C), basting occasionally. When the celeriac is soft in the middle, take it out of the oven and let it sit until it's cool enough to be peeled and sliced. Whisk is a dish one big egg and s&p, and pour in another dish bread crumbs. Vet the celeriac slices in the egg mix, then cover with breadcrumbs. Shallow-fry them in a pan with some sunflower oil. Enjoy as a warm side-dish or consumer as snacks.
