Quick salmon avocado green salad with toasted pine nuts

For lunch I made a quick salmon avocado salad. 

Recipe for one person:

  • mixed salad (i.e. mangold, spinach, lamb's lettuce, rucola), as much as you want to eat
  • avocado, 1/2
  • toasted pine nuts, 2 tbsp
  • balsamic vinegar, 1 tbsp
  • lemon, half a wedge
  • parsley, chopped
You can also add a drizzle of extra virgin olive oil, but it is not necessary as salmon in itself is quite fatty.
