For lunch I made a quick salmon avocado salad.
Recipe for one person:
- mixed salad (i.e. mangold, spinach, lamb's lettuce, rucola), as much as you want to eat
- avocado, 1/2
- toasted pine nuts, 2 tbsp
- balsamic vinegar, 1 tbsp
- lemon, half a wedge
- parsley, chopped
You can also add a drizzle of extra virgin olive oil, but it is not necessary as salmon in itself is quite fatty.
