Mussels! Cozze! Simpukoita! Yes!

We eat mussels typically when there is a letter "R" in the month.  An old hygiene rule of thumb warns that shellfish should be avoided during months with no R's (May, June, July, and August). We do not eat Danish shellfish during summer months, simply because these creatures reproduce then. Let them do that in peace. 


Mirepoix of carrots, garlic, spring onions, parsley, chili flakes, and cinnamon (only a 1/10 of a teaspoon as we need only a hint of cinnamon). Start stir-frying mirepoix on highest heat. Then add in the cleaned mussels and pour in a glass of dry white wine. Stir and put a lid on and cook for 2 minutes on high heat, then stir and cook for another couple of more minutes until alcohol has evaporated, and the mussels are ready to be served.   

Eat straight from the shell using an empty pair of shell as tweezers.
