Today I and my son prepared Alsacean Tarte à la Rhubarbe Meringuée, a recipe that my Alsatian friend Laurence gave me yesterday. We used rhubarb from our own garden. I have not piped often, so the surface looks a bit wild. The original recipe can be found from Made in Alsace.
"Did you enjoy it", Laurence asked after I sent her a photo of the cake. "My god!" I exclaimed. "It was deliciously moreish. Our new family favourite! Thanks for sharing the recipe, Laurence!!!"
The proof is in the pudding, Alsatians know what flavour combinations work, and when they work! This is absolutely fantastic Spring time cake! That is when rhubarb is at its best.
