Many years ago, the retired Head of the hospital of the Università degli Studi di Roma (La Sapienza) asked me: "Helena, I have heard that you are into cooking... well, this is a test. Do you know how to cook Caponata?" I replied, "Sure! Do you want the catanese, palermitan or agrigentina version?!" "Wow!", he replied. And the next weekend I showed up in their vacation home in Costa Argentario in Tuscany with my friend and prepared the old man his favourite version of the dish; which is my favourite too.
