Fresh-water crayfish & smoked herring sandwiches

The Nordic people love crustaceans as do the Scotts! Today, I went to K-Citymarket Tammisto with our teenagers (Finnish-Scottish boys), who wanted to have fresh-water crayfish (procambarus clarkii) and smoked herring for dinner tonight.

We place the crayfish and herring along with Prawn Skagen sauce and/or Remoulade on Islanders bread and Malax limpan. 

So delicious!
