Fennels, potatoes and asparagus in a pan


Here is a recipe for a simple but rather tasty dish.

Ingredients:

  • 1 fennel bulb + leaves
  • 2 potatoes
  • 10 baby asparagus, if desired
  • Garlic
  • Salt, pepper & evoo
  • Sprinkle of white wine

Method:

  1. Pour some evoo on a frying pan. 
  2. Chop garlic, fennel and potatoes
  3. Frying the veg on medium heat until you get some maillard reaction. 
  4. Stir in chopped baby asparagus, fennel leaves, a splash of white wine, sprinkle of salt and pepper, and cover with a lid.  
  5. Serve when the potatoes are cooked through.
