My goodness, this pasta dish was tasty!!! It was the delicious smoked fish that made the dish sing!
Sauce
- plenty of evoo
- 1 garlic glove, sliced
- 1 red onion, finely chopped
- 6-8 anchovy fillets
- chillies, as much as necessary
- 5 san marzano tomatoes, chopped
- a splash of white wine.
- 1 tbsp of capers
- 8 green olives. sliced
- black pepper
- parsley, chopped
- No added salt, except for the pasta water
- 400 g of BBQ smoked salmon (leftovers from last night)
- 500g pasta
Pour extra virgin olive oil into the pan and add the garlic, red onion and anchovy fillets. Fry until the onions are soft. Then add the tomatoes and continue cooking until the tomatoes are amalgamated with the onions. Now pour in some dry white wine and stir for a while. Finally, add the capers, olives and salmon. Season with black pepper, stir and cover with a lid. Cook the pasta. Stir the al dente pasta into the sauce. Drizzle over some chopped parsley.
I used in this tasty pasta dish leftover salmon that my husband barbequed last night. A regular BBQ can do the job a smoker, too. We use a Weber smoker box that holds wood chips. It adds a delicious smoke flavour to any grilled meal.
