Plant-based lunch — Bulgur stuffed gem lettuce leaves and blood orange wedges

For lunch today, I prepared Bulgur stuffed gem lettuce leaves and blood orange wedges. 

Method
Finely chop bell pepper (1/3 yellow & 1/3 red bell peppers), 1 small onion, half a celery stalk, 1 large tomato and mix them with a cup of cooked bulhur,  chili flakes, chopped parsley, chopped coriander and chopped mint. You need also to mix in 2 tbsp of extra virgin olive oil, a juice of half a lemon, 1/4 tsp of salt and 1/4 tsp of pepper. Fill gem lettuce leaves with this mix and place them on a tray with some Moro blood orange wedges. 

I absolutely love my Solimene ceramic plates!
