My Favourite French Endive Salad comes with 4 large endives, 1 medium pickled beetroot (peeled & diced), two kinds of cheeses approximately 175g (stilton & bleu d'Auvergne, crumbled), 150g cashews (salted & roasted), 1 pink lady apple (cored, peeled & chopped), aged-balsamic vinegar, and a little bit of salt. You can also add extra virgin olive oil, if you like.
